What could be better than NOT cooking on a HOT day in the middle of baseball season? SLIDERS!! A few years ago I became aware of Paleo cooking…unprocessed foods , sort of like what cavemen might eat, hence the name. I bought a cookbook by Michelle Tam. Interesting and fun recipes. One of them was for Hawaiian pulled pork …to be made in the crockpot.(instead of making a pit and burying it in the ground. This is a LOT easier!)

So, here’s what you do:

Make your guest list and invite them at least two days ahead of your feast.

Go and buy a large pork shoulder, bone in or out doesn’t matter…some bacon, too!

Get out your crockpot the night before your meal.

Line the bottom with 3 or 4 slices of bacon. Lay your roast on top.

Chop up 5 cloves of garlic and stud your roast with it.

Sprinkle with salt. Michelle suggests 1 1/2 tablespoons of  red Hawaiian Coarse sea salt ( or fine). I have used pink Himalayan  salt and it came out delicious! Salt the roast all over.

Now close the lid, set it on LOW…and  cook for 16 HOURS! ( maybe less if you have a new, hotter crockpot)

So now, make some coleslaw with a Hawaiian vibe: I add a little rice vinegar or white balsamic, crushed pineapple, cranberries…( you can add mandarin oranges, chopped, or coconut if you really want to go crazy!) …a little mayo —-all to your bag of slaw …Mix and stick in fridge.

For the rest of the meal, I use slider rolls (or even regular hamburger buns), sliced tomato, corn on the cob. I barely consider this cooking. I mean you’re boiling water! And , of course, you could have someone else put the corn on the grill! Watermelon chunks for dessert!

At mealtime, I use two forks to shred the pork, and I serve it without sauce—- just slaw on top of my meat in the bun. but you may want to try a sauce of  sour cream and horseradish or your favorite barbecue recipe.
