Working on coloring my eggs as I write this. For years now, I’ve chosen to color them all RED! They’re very festive. I keep them in the pot where they were boiled, add some vinegar, and plenty of red food coloring…and wait til water cools…Voila! All done! No fuss, no mess! Of course, I have no little kids around, so I can get away with this.
And this year, because of my recent injury, and because I’m trying to take it easy, I’m letting Jackie do my favorite Easter recipe: Ciambelotto. It’s a sort of cake, dense and lemony, with a crusty top. Some members of my family use anise flavoring instead of lemon, remove from oven before it’s finished baking and slice it, and put it back in to toast. ( Then, it becomes biscotti,) Ciambelotto has a silent “b” And is pronounced: chum a lotta. Biscotti, on the other hand sounds more like: bis scoot…like the “oo” in foot!
You don’t have to be Italian to make this yummy treat..or to enjoy it with coffee or a cup of tea…or a glass of wine. Try it…you’ll like it!!
