So, I promised you the Marie Somma recipe for Cascadilles. I am typing with one finger with my iPad 3inches from my nose, so please forgive any errors that I miss!

Ingredients for crust:
9 eggs
6 cups flour ( plus a bit on side if you need more…)
1 1/4 cup of Crisco ( it comes in very tidy packaging now, rather than the big can)

1. Measure out flour and crisco
2. mix with fingers
3. Make a well and ADD eggs
4. Mix with hands til well – incorporated
5 knead til soft and pliable
6. Divide into 4 parts and roll each part into a “log”
7. Refrigerate while you mix filling

Ingredients for Filling:
12 eggs ( save one egg white for “ wash”)
1 1/2 pounds of grated Romano cheese (Costco sells 2 pound bags)
Black pepper

Okay, this part is mostly by paying attention to consistency. If you have extra large eggs, you may need MORE Cheese! Your mixing fork should stand up in the bowl when it’s RIGHT! And the pepper depends on how hot you want it. Judy and Leigh like it hot … their filling is grey from pepper. Franny likes to taste the cheese. The right combination of pepper and cheese is yours to experiment with. My filling is a little “tweedy” with pepper and still more yellow from all the eggs. My mother-in-law used half of a Costco container of pepper, too much for Jackie and me.
