According to the Dalai Lama, we should approach Love and cooking with reckless abandon! I love this idea! Especially when I start feeling “down,” it makes me want to go into my little kitchen and try something new! The news this week has been particularly sad and then covid struck a little closer to home. ( My sister-in -law, her husband,and son have all tested positive! My nephew has been hospitalized for his breathing.) Yikes!! So…besides praying, how does one cope?
By cooking, of course! First, I made stuffed peppers the way Jackie’s mom did it: some stale Italian bread, parsley, salt and pepper, some grated Locatelli Romano, an egg! Chop your bread into cubes, add some boiling water to soften it up, add the rest of the ingredients and stuff it into your halved peppers. ( I don’t like green ones anymore, so I use red or yellow or orange peppers! They’re sweeter and more colorful!!) Now, drizzle a little olive oil on top of each one and bake in the oven for 45 minutes to an hour at 350. They make a lunch or a snack or …dinner with a salad. Yummy!
Next on the agenda was some soup. Fiesta Sweet Potato! Sounded exciting to me…sweet potatoes, black beans, I substituted salsa for the picante sauce, some jarred roasted peppers, vegetable broth, and a TABLESPOON of smoked paprika —- which is what gives it a little “kick!!” (again, you can find it on allrecipes.com)
Does all this cooking change the world situation? No, but it can make one feel better, and eventually THAT may change the world…you know, the old ripple effect idea. We always have hope…
